I am smoking pork today and this is the second time in a row that I am questioning both of my meat thermometers. Half an hour ago, I was at 158. The smoker is between 230 and 250. Twenty minutes mater, it is telling me 155. I have 3 thermometers with me. 1 goes in the smoker and tells me smoker temp- has always seemed right. 2 of them are meat thermometers. Last time, I dried the crap out of the pork butts trying to get them to the right temperature, but it took 3 hours longer than normal. It really has me questioning the meat thermometers or my own application of them. Has anyone else experienced this?
